My first baking memory is of creaming together sugar and butter in a stainless steel bowl with a wooden spoon for my mother. This was a coveted task in our home, as my sister and I liked to taste the butter-sugar mix as we worked. From this base Amma made some of the fluffiest cakes I've ever tasted. I especially loved watching through the glass dome as the cake rose slowly in it's circular oven.
The cakes were almost always ring cakes. The mould had a small tumbler at the center which was removed while the cake cooled. Unmoulding the cake was not without it's share of drama. Amma would run a knife around the sides, place a large stainless steel plate over the ring and flip. She would tap on the mould a little and finally lift it off.
And we had a cake.
